Day One through Three

Well, I considered starting this on Monday but I wanted to make sure I'd make it through the first few days....

I started a new way of eating...well its not new, but it is to me....

In April of this year a good friend of mine told me about someone she knew who had been doing fertility treatments and struggling to get pregnant. Her friend was doing everything she could find to try and get pregnant. Her last option was to go to a acupuncturist. The acupuncturist informed her that she probably had pcos (Poly Cystic Ovary Syndrome) and told her to cut out all refined/processed food. She did that and within three months she was pregnant. Once Kerry shared this story with me, I was all over it! I remember a couple of my doctors telling me I most likely had this but no one ever really told me what to do. They just kept saying "Lose weight". Well I have been trying to lose weight for YEARS!!! I was active in High School, I played Volley Ball, Soft Ball and Basket Ball. I enjoyed many teen activities, I struggled because it seemed like I just kept putting the weight on, no matter what I did. So In the end, I just about gave up. Last year I was so close within a month or so of getting the Gastric Bypass Surgery. I have nothing against that, but I really wanted it to be my last option. I am not one that thinks about food all day every day. I just want to live a life that isn't limited by my weight. I have struggled with depression and a sense of loss since I was young.

It wasn't until I started researching PCOS that I finally felt like there was HOPE! As I read book after book, website after website, tears would stream down my face. I finally fit in somewhere! The symptoms are so broad but they were there! The constant fatigue, the pain from a touch, the unexplained weight gain, the irregular periods or lack of periods, the major mood swings....the list just goes on! They are all there!!! I don't have all the symptoms such as acne or hair loss (though I have noticed in the last year my hair has thinned out even more!) but its all there. Just when I felt like maybe I was lazy, and maybe I just needed to move on, the answers were there!

Now, I haven't gone to a doctor to be completely tested. I am emotionally drained from going from Doctor to Doctor. I have had to explain the last 15 years of my life to doctors who don't even want to bother and just want to say "You need to diet and lose weight and none of these issues will happen" well I know you went to school for so many years, and you think you have all the answers, but you don't! I am not just a piece of paper you can throw an answer on and that makes life all better! You don't live with the many struggles I deal with on a daily basis so please don't try and tell me what you think I should do, until you have been there! *done venting*

This process has not only been hard on me but on my husband as well. He has battled the Doctors with me, seen me give up, and seen me try to do things that deep down inside I would LOVE to do but physically I can't. He has seen the pain in my eyes and felt the pain from my heart. I don't deserve such a loving and caring man, but I am so thankful for him!

So with all that said...

I started my new way of eating on Monday June 15, 2009. I am cutting out sugar, flour, processed, and dairy (Out of all of them, this is the hardest for me, I know weird but so true!) food.

Monday-
Wasn't to bad, maybe because I was excited about the new change....
I had a peach for breakfast
2 Hours later I had a Banana
2 Hours later I had an Apple
For Lunch I had Celery with Peanut Butter
2 Hours later I had another peach
For dinner I had Roasted Turkey breast, roasted carrots, celery and onion and a side salad with a little dressing (this dressing had a small amount of sugar in it but I only had a small amount).
For dessert I had some sliced strawberries
Everything except the Peanut Butter was organic.

I think day one was good. It was hard because I did feel hungry every two hours but I just ate small portions :)

Tuesday June 16, 2009
Breakfast I had two hard boiled eggs
2 Hours later I had a banana
2 Hours lather I had a banana with peanut butter (I find I need a little protein)
for lunch I had a Salad that had fresh Pineapple, Mandarin oranges, strawberries, lettuce carrots, and tomatoes. 2 tbs Fat Free Honey Mustard (I Know loaded with sugar! but I didn't have very much I promise, the fruit made the salad pretty wet)and plain grilled chicken
For dinner I had another salad (tomato, cucumber, red pepper, green pepper) and shredded turkey breast (from the previous nights dinner) and very little Green Goddess salad dressing
For dessert a few strawberries

Wednesday June 17, 2009
Ok so it was really hard! I really wanted to eat some chips, or have a CHEESE Burger with fries. I mean serious cravings...but I held out!

2 Hard boiled eggs for breakfast
2 hours later 1 banana with peanut butter
2 hours later a Mandarin orange salad from Wendys
3 hours later a banana with peanut butter
For Lunch I had the other half of my wendys salad
For dinner we went to Red Robin, this was the true test. I mean You go to red robin and you HAVE to get the freckled lemonade, unlimited fries, and a burger......BUT
I got a naked burger (No bun no cheese) with lettuce, tomato and onion and some mustard. I had a side salad (It was HUGE so I only ate half of it) and two slices of Cantaloupe. It was just right! Very tasty!!!
For dessert I had a banana with peanut butter

I know, I have been eating a lot of bananas but they are convenient and not as expensive! lol I will shop better next week for the right kind of food so i will have a slight more variety!

My goal is not to lose weight (which I know will happen and am excited about) but to change my lifestyle of eating...In the end Tim and I would love to hear the words "You are pregnant"!

I hope you enjoy the adventure of the Change...and maybe it will inspire you to make a difference in Your life!
